Kelley's Summer Favorites

White Linen Mocktail Recipe

"The White Linen Mocktail is a personal favorite of mine. This bright, refreshing mocktail full of fresh ingredients is the perfect companion for balmy summer days or to bring back the taste of summer in shoulder seasons."

Watch Kelley make this mocktail and find the recipe below.

To Craft The White Linen Mocktail

Yield: 2 servings // To make a pitcher, multiply by 12

  • 3-4 slices seedless cucumber, per glass
  • 1/2 lime, per glass
  • 4-5 basil leaves, per glass
  • Simple Syrup (Kelley recommends this one)
  • Unflavored club soda

Begin by prepping all your fresh ingredients and washing any fresh produce.

Start with 2 rocks glasses and place the cucumber and basil leaves in the bottom. Using a wooden muddler, muddle the two ingredients to meld the flavors. Squeeze a half lime over the aromatics.

Fill glasses with cubed ice.

Add 1 Tbsp of simple syrup. You can use a plain syrup for this or Kelley's favorite: Belvoir Fruit Farms Elderberry Simple Syrup

Top the drink with the unflavored club soda and gently stir to blend. Sip & enjoy!
